Happy May Day!



Back in January, when we were planning our May vacation, it seemed like it was so far away.  Now it's almost here!!  Oh my gosh!  I'm not ready!  I wanted to lose some weight! Scratch that.  I wanted my knees to feel like they are 20 again. Scratch that.  I wanted to have lists made to make packing easier. Not done yet (still time for that)....

And on top of only having a week to get ready for vacation, at work we have our annual Mayfaire by-the-Lake art festival coming up next weekend.  It's a fantastic event, full of amazing art and good music. We have 150 juried artists and anticipate the usual 65,000+ visitors.  This week is going to be absolutely CRAZY.  It is a real blessing that I have a volunteer who has been helping me two days a week.  She is going to 'hold down the fort' for me while we are gone, so things should be a little better when I get back to work. A real blessing.

Remember the beef roast I put in the crock pot earlier this week?  I made a big pot of beef vegetable soup with the leftovers last night.  There is enough for tonight, too.  Joe doesn't care for casseroles, but he does like soup, so we have soup several times a month, even in the summer (it's nearly always summer in Florida!).

The cats have settled down into a new routine, without Onyx.  Things seem to be back to normal for them.  They are eating again, and not acting up like they did for awhile. It's a good thing.  I still miss my pillow pal though.

My Sis texted me a couple of days ago, all excited that Bruce had the catheter removed!  It was a big step and they were so hopeful.  Unfortunately, the next morning brought a rushed trip to the ER to get the catheter put back in.  It was a setback and we all feel the let-down.  Still hopeful that the proper sensations will return and if you can adjust your prayer lists accordingly, it will be appreciated.  Humble before our God for all that he has done for Bruce and Tammy since December 22nd and sorry to be asking for more.  More is needed though.  Thank you.

I had a request for the breakfast deviled eggs recipe that I took to the potluck on Wednesday.  It was SO easy.  I Googled for a recipe and this one came up.  I used 18 eggs, though.  You can adjust the numbers on the recipe, so that was easy.  I did add a TBSP or so of sugar and a tsp or so of Worcestershire Sauce and a dash of salt...taste it and add what you want.  I used more cheese, too.  Make them your own! I also use a zip-lock bag to fill the eggs.  The mixture goes into the bag and then cut a small piece off one corner so you can squeeze the filling into the egg halves.  So easy and cleanup is a breeze!

  1. Hi Terri, thanks for stopping by. Getting ready for vaca is a real chore but you will have fun once all is said and done. Sorry about Bruce. My hubby is on a feeding tube and I have been praying sometime he will be able to eat again. I will put Bruce and your sis in my prayers. Don't be sorry to ask for more prayers we all need them at one time or another. 50 years of making deviled eggs and I don't think I have ever made them the same way twice, lol. Love your maypole....

  2. First of all, will definitely be praying for Bruce, and of course Tammy too. I sure hated to read that this morning, but God knows. Oh my, you do have a busy week, I remember from year to year....you will need that NO trip even more. The eggs sound so good...will give them a try at the next family get together.     1. Kris, we are going to New Orleans to celebrate our 30th wedding anniversary! New Orleans is one of our favorite places. This will be our 4th visit, but we haven't been since Katrina.

    The soup sounds so good. Having a volunteer help, WONDERFUL!!! And of course will keep Bruce in our prayers.

    Gotta share my deviled eggs tip here. I have a really old baby spoon from my 1st born, who is 43 years old) that I use to fill the eggs. It holds the perfect amount. Now, when the kids come to visit, they shake their heads that I've kept that spoon for so long, but they don't know just how handy it has been. Silly kids.

  7. Thanks for the tip with the ziplock bag. Sure hope you get everything done that needs doing before your trip to New Orleans and pray that your knees don't give you problems. That way I might see you on the EarthCam in Bourbon Street. I hope and pray that Bruce's setback doesn't last too long. Enjoy your Friday.
