Thankful Thursday with Rebecca Jo...

There is always so much to be thankful for and my list could go on and on but here are just a few things to share today...


I am thankful that Joe is doing better but he is still in pain and we still haven't heard about the MRI. Even though we are frustrated with the insurance company, we are also blessed to have insurance.

While we were out and about on Tuesday, we found a road-side stand selling FRESH Florida strawberries!! It is strawberry season here in central Florida and these are some of the first off the vines!!  I bought the half-flat and they are SO sweet!  Cleaned, sliced and we are eating them like crazy!




Here in Lakeland and the close-by Plant City (home of the annual Strawberry Festival) you can see strawberry fields on both sides of most back roads.  Acres and acres!


I am thankful for our strawberry season in central Florida!!

I am also thankful for each of you!

  1. I loved going to Plant City for strawberries! The stuff we get in the stores up here are always halfway to going bad and they don't have any taste at all. I used to go to a pick-your-own place, but it has gone out of business. Sigh. Have a lovely Thursday, Terri!

  4. Just been catching up on your posts Terri. Glad to hear Joe is doing better and you managed to visit the farm but I hope you get good news on the MRI soon. Must be very frustrating. I hope your hip doesn't get any worse too. Enjoy the rest of your week.

  8. How I miss FL strawberries. They are SOOO good. I had relatives that lived in Zephyrhills so went through Lakeland and Plant City often when we lived in Ft.Myers. xo Diana

  9. We've been eating some good strawberries here lately. I made strawberry shortcake last week, and have been slicing them with yogurt or just by themselves...so good. Praying for Joe to get better soon. Yes, we do get frustrated with the delays by insurance, but then again, where would we be without it? I am very thankful for it. Praying for you also regarding your surgery. I guess you don't know when it will be rescheduled yet? Praying. Have a blessed and beautiful day.

  14. Beans are a dieters best friend. They offer a lean protein, that will help keep you going for long periods of time. They are also very inexpensive, and will fill you up quickly. Beans can be used in so many different ways, and can be used in many meals.

  15. Feeling full reduces our feeling of hunger. Feeling hungry causes us to eat. Eating causes us to gain weight. So feeling full more often will help us lose weight. One way you can "trick" your body into feeling full more often is by adding more fiber to your diet. Fruits and vegetables have lots of fiber, so do whole grains. But, if you can't eat more of either of those you can also add a powdered fiber product to drinks, sauces, and even dips.
