Linking up for Thankful Thursday....

Today I am linking up with Rebecca Jo, over at Knit By God's Hand, for Thankful Thursday!


There is always so much to be thankful and grateful for!  Today, I am on a clear liquid diet to prepare for my procedure tomorrow morning.


It seems like a fitting time to get serious about losing weight (again) so I am also mentally preparing for another stab at a low-carb/high protein diet.  I know it works and it really isn't that hard to stay on.  I get to keep dairy in my life and I love eggs and green veggies. Meats are also allowed.  I don't miss sugar/sweets.  My downfall is potatoes, rice and pasta.  Sigh.  I AM happy and thankful that I saw a bag of frozen riced cauliflower at Sam's Club!  With that in the freezer and ready access to spaghetti squash, meals will still be satisfying. I can pretend I'm eating carbs!! LOL

I took the whole day off today and I am thankful to have sick leave saved up that allows me extra time when needed.  Sleeping in on a Thursday was really nice.

I am so thankful for Joe!  He got up before me this morning and took my car to the car wash.  It was so dirty from the pollen and still had leaves in it, tracked in from the old house.  I am so thankful we left those live oak trees behind!!  We only have palm trees at our new house!!  No more leaves!


We have been invited to dinner with friends on Saturday evening.  It's been several months since we saw Mike & Mary Ellen so it will be fun catching up with them.  They are cooking a late St. Patty's Day meal with corned beef.  I know it will be good!  Thankful for re-connecting with good friends!

  1. Keeping you in prayer, Terri...and I might just add, I think you know this, but you can have red potatoes...just 3 ounces when on a diet. 3 ounces might not seem a lot, but it is. (or you can have sweet potatoes)---anyways...where was I...keeping you in prayer, friend.

  3. So glad you're life is getting back to somewhat a normal state. Good luck on the healthier eating. Maybe we should all join some kind of "club" together to get healthy. Prayers for your procedure tomorrow....I know today has been rough. :(

  8. I'm going to look for that riced cauliflower. Last year at some event or another, we were served mashed cauliflower w/ garlic overtones .... soooo yummy! I Googled recipes and tried to replicate a slow-cooker full myself. Epic FAIL!

  10. Oh....you are having THAT done today...praying all is well. I am sure you are glad to have YESTERDAY over! That is always the worst part! I'm glad you will have fun with good friends tomorrow. That is always a blessing! Have a wonderful weekend!
