Italian Creme Cake Day!....




I finally got started making Joe's Italian Creme Cake.  Thanks to Chef Dennis and Chef Grace for answering my questions and taking an interest in helping me!

I'm sure my first attempt, though it turned out good, was a bit clumsy.  I am not a fussy cook, and prefer 'getting it done' to taking the time needed to 'get it done right'!  LOL - not good, I know.  This process took me the better part of the day, with all the chilling time and resting time...but Joe LOVED it, and said it is very close to what he remembers.  His suggestion for next time.... use more rum and liqueur (!!), and his mom put the almonds inside, on top of the pudding layers, rather than on the outside (which is how I've always seen them).  Everything else got his seal of approval!  Hooray!!  Success!!  Totally worth it, to see him enjoying it!!



Sponge Cakes First





Cooking the cream and vanilla bean, so it had time to cool and rest.


Simple syrup with run and cherry liqueur.


Toasted almonds.


Custard/Pudding (added cocoa to half of it).


Whipped cream for the sides and top.


First layer, with chocolate custard.


Second layer, with vanilla custard.


Three layers together.


Put together....


A happy husband!!!

Joe is happy that it won't last long, and has to be eaten quickly.  The whipped cream isn't stabilized (Chef Grace told me how to do it, using unflavored gelatin, but I didn't have any.)

  2. That looks soooo good. I dont think I have ever made a cake or anything else that took that many steps or had three layers, but if Joe is happy, it was definitely worth it and a success.

  4. Joe didn't have to say anything... his smile is worth a thousand words. Priceless. The things we do for the man we love. hahaha A lot of work, but well worth it. It looks amazing. My mouth is watering just looking at the picture.

  6. That's one thing I've got plenty of - unflavoured gelatin. That's what I use for my jelly candles. I know Jello makes it in the US, so it shouldn't be hard to find. It looks yummy. The important thing is that Joe likes it. You could freeze it perhaps.

    1. Brenda, yes Jello makes it and the store has it all the time, it is just not something I've kept on hand before (I have flavored, but not unflavored). I totally forgot to get some. Will try it next time!
