Monday's Weekend Recap...


On Friday, I went to see Helen after work and then stopped at Sam's Club for a few things, including two rotisserie chickens for my dinner party on Saturday.

Helen wouldn't wake up.  I spoke to her and touched her.  She was fast asleep so I just spoke with the nurse a bit, checked her room for supplies, and then went on to Sam's Club.

I got up Saturday morning and got the house cleaned and started prep for dinner.  I served what I call typical mid-western comfort food.  Chicken, mashed potatoes and gravy, creamed corn, a salad, and I had the fixin's for ice cream sundaes for dessert.  Everyone seemed to enjoy dinner and had fun making their own sundae.  I used vanilla bean ice cream and gave them the choices of pecans, walnuts, chocolate or caramel syrup, sprinkles, whipped cream, and cherries on top.  I used some pretty crystal bowls and it was fun.

Wendy wanted a photo so her hubby, Gary, was the selfie guru...


I heard from my sister Patti that they were having a good time at Tammy's in Georgia.  Tammy's good friends, who live next door to her, prepared a low country boil for dinner on Saturday night.  If you remember, they made shrimp and grits when I was up there visiting.  They are great cooks!  Patti sent me this picture...

  2. Your dinner sounds perfect. I love it when friends get together for a meal. I feel like Jeff and I are usually the ones hosting because I think too many are afraid of putting it altogether. I think the outcome is made special with good friends and conversation and is worth the effort. Low Country Boils are one our favorites. You know what I love about you Terri; you don't wait for the fun to come to you. You make it!

  3. Great selfie! Yes, your dinner sounds Just Right; especially the make-your-own sundae feature. I strongly suspect there's a little kid in each of us who still likes to play with their food. (LOL)

    Maybe someday somebody will prepare Low Country Boil for me. I've never had it. Looks casual and tasty!
